Irish Whiskey

Early Irish Whiskey was drunk fresh from the still and often flavored with herbs, in more or less the way Gin is today. In its early years Irish whiskey, with it’s more refined mixture of malted and unmalted grain that caught the imagination of Victorian society. Today’s Irish whiskey (in order to be classified as an Irish Whiskey) has to be distilled from grain on the island of Ireland. It then must stay stored within wooden casks for at least 3 years, and maintain an alcohol content of at least 40%. Even in present day, Irish whiskey still maintains a strong contender with other international producers.

  • A smooth, malty and slightly sweet, blended Irish Whiskey.

  • A unique flavor profile with a powerful, spicy flavor.

  • Distilled three times and matured in oak casks for up to seven years.

  • Perfect balance of spicy, nutty and vanilla notes with hints of sweet sherry and exceptional smoothness.

  • A subtle touch of hops and cocoa beans, Marzipan and charred oak with a milk chocolate and butterscotch finish.

  • Aged in bourbon barrels delivers more concentrated spice, nutty notes and vanilla sweetness.

  • Wonderfully mellow and smooth, a mouthful of complex flavour – fudge, toffee, spice, hints of wood and leather, vanilla and a gentle sherry nuttiness.

  • Layers of succulent fruits from the sherry butts interlaced with vanilla from the virgin oak, balanced with the pot still spice to deliver a silky mouth-feel.

  • Mellow sweetness and toasted wood are complemented by fruit richness, characteristic of the port casks. A touch of creamy dairy fudge and dark chocolate add to the complexity.

  • Called an “approachable” whisky, it has a rich, warming taste of fresh fruit and vanilla.

  • Irish Manor is distilled to perfection, extremely soft and satisfying.

  • A soft almond taste, with nougat, peach, caramel and vanilla flavors.

  • A beautifully fresh, fruity bouquet with an incredibly smooth, sweet taste and delicate dry finish.

  • A beautifully balanced single pot still Irish whiskey, with a warm, generous texture, rich, sweet flavours and a spicy kick.

  • Redbreast 15 is richer, earthier and stronger than its 12 year old sibling.

  • A combination of malted and unmalted barley matured in a mixture of bourbon barrels and first-fill oloroso casks, resulting in a rich and complex whiskey.

  • Mellow and well-balanced with a bright, elegant fruitiness and mild spice flavors.

  • This unique concoction is a 100% Single Grain Irish whiskey, from the multi-award-winning Cooley distillery in Dundalk.
